What are the distinct differences between classical and jazz music?

I'm a pretty good classical clarinetist trying to learn to play jazz.
I know how to swing and all but when I record myself (especially
improvising) my "jazz" still sounds really classical.

So, what characterizes each? What makes classical, classical and jazz,
jazz?
